Fake It don’t Make It
Before kids I would never have been caught dead with a store-bought desert or appetizer. I prided myself with making things from scratch and couldn’t understand why anyone would need the convenience of bottled sauces or frozen pies. Now I know better. Life gets very hectic with kids and work. Today, more often than not, I find myself sprinkling powdered sugar on store-bought cupcakes or emptying a container from Pete’s into one of my fancy serving bowls. About the only thing I don’t do is pat flour on my face to make it appear like I have been slaving all day. So when I find a recipe that works and that saves me time I am all about sharing it. For instance this little gem that landed in my inbox from Real Simple Magazine. They were promoting easy appetizers for the SuperBowl but this one was perfect for book club. All I had to do is puree a container of hummus and thawed frozen spinach – in my case I actually bought fresh spinach and steamed it so I could say I did something. What a delicious dip in less than 5 minutes. If you get stuck, give it a try.
